Produced by coarsely milling the whole maize grain (corn) through the degerminated maize milling system into a gritty-textured meal, then sifting out the bran and flour. No additives. Because the Polenta is largely the germ, it has a shorter shelf life and must be refrigerated or frozen. It is very quick cooking. Polenta is rich in vitamin A & C.
